Easy Chicken Soup Recipe
With Leeks & Onions


Quick & Easy Chicken Soup Recipe:

If you are a soup lover, this one is for you. This easy chicken soup recipe is for every household. This recipe does not require a lot of prepping. You can either cook the chicken right before you make this chicken soup, or you can use leftover, pre-cooked chicken. Total cooking and prep time is about 35 to 40 minutes.

You do not have to add all of the ingredients. If you wish, you can add kale instead of leeks. You can leave both the kale and leeks in or leave them off. It's your decision to choose how you want this chicken soup recipe prepared. Always experiment to your own tastes for best results.

Be sure not to over boil your vegetables in this decadent soup.  Leeks and onions are a super food, and over cooking will kill valuable nutrients in this masterpiece.

Ingredients You will Need For Your Chicken Soup:

  • One pound of cooked, diced chicken
  • Two tablespoons of olive oil
  • One cut up onion
  • Two cloves of garlic
  • One cut up turnip
  • One cut up leek
  • 3 cups of chicken broth
  • 3 cups of water
  • 3 medium or large sized carrots
  • Two stalks of cut up celery
  • 1/2 cup of cooked brown rice
  • 1/4 cup of cut up fresh parsley
  • Salt and pepper (Just a sprinkling)

Warm up a large pot with olive oil. Add the onions, garlic and leeks, and saute for a few minutes.

Add the chicken broth and water into the pot, and bring it to a boil over high heat. Boil for approximately 20 to 25 minutes.

Add the celery, pre-cooked brown rice, and pre-cooked chicken, turnips and carrots to the soup. Add salt and pepper.

When the soup is almost done, stir in the chopped parsley and gently stir for an additional four to five minutes.

This chicken soup recipe is very quick, requires only a few ingredients, and is a wonderful addition to any household.
